Near Auxerre, Bailly (hamlet of Saint-Bris-le-Vineux ) in the Yonne in Burgundy-Franche-Comté , near the Canal du Nivernais this former quarry of 4 ha is located in the heart of the stone called ” Thunder “, more than 50 m underground. Since 1972, the Bailly Lapierre Caves have produced internationally renowned Crémants de Bourgogne .
The Caves Bailly Lapierre site is the largest wine tourism center in the Yonne, open to guided tours every afternoon from mid-March to mid-November for individuals and by appointment for groups. The visits retrace the history of the cellars and the men who have shaped it, from the quarry called “stony” to Soufflot born in Irancy and architect of the Pantheon, the development of our local Auxerrois basin by the Canal du Nivernais or the obtaining the AOC Crémant de Bourgogne in 1975 thanks to the will of some Auxerre winemakers led by Michel Esclavy. The Bailly Lapierre Caves respond to 3 labels: Tourism and Handicap, Vineyards in Cellars and Vineyards and Discovery showing the will of this structure to be part of a quality approach of welcome and sustainable development.
